TSUKIKAGE

Omakase · Six seats · Manchester

A yanagiba knife beside a block of tuna, fresh wasabi and a sharkskin grater on a linen cloth

The story

Dinner at a cedar counter, one piece at a time.

Tsukikage means “moonlight”. Chef Ren Aoyama (a fictional chef) spent twelve years behind counters in Tokyo and Osaka. Here he cooks for six people a sitting, behind an unmarked door in the Northern Quarter. There is no menu to choose from: each evening is shaped by the morning’s catch, the season, and the guests at the counter.
